Jane Eyre Supplementary Materials

The next one I ran across was a recipe for English Tea cake on page 234-5. Not a huge fan of tea, but I like cake. Just sharing all the supplementary materials here.

Ingredients: 
½ pound of butter 
½ pound of sugar 
½ pound of flour 
½ pound of currants 
½ pound of raisins 
¼ lot cinnamon  
1 lemon 
¼ lot pf orange blossoms 
8 eggs 

Preparation: 
First, slowly melt the butter to make butterfat, stirring until clarified. Gradually add the egg yolks. 

The sugar is rubbed against the lemon and stirred for half an hour with the butter and the eggs. Now stir in the currants, raisins, spices, and then flour. Beat the egg whites until the become frothy, then blend with the other ingredients. Slowly bake the mixture for two hours and then sprinkle with sugar and cinnamon.  

 

What I think of this:
I swear I copied this down letter for letter. I don’t know what a “lot” is, when used as a measure of cinnamon or orange blossoms, but a google search turned up “spoonful”.  

The “pf” seems likely to be just a typo that should read “of”. 

The recipe says bake for two hours…… no oven temp given. 2 hours seems like a long time to me, so I’m assuming the temp should be pretty low, or it’s gonna be cajun blackened english tea cake. Again, quick google searches showed bake times of around 20 minutes at 375 Fahrenheit. It also mentions nothing about splitting the dough into 8, 10, or 12 individual ‘cake’ sizes for baking. It just has the recipe as one big lump of dough. 

So…. I dunno. I’d just look up a recipe online, rather than trust this one. It seems incomplete.
